Easy Mediterranean Quesadillas with Spinach and Feta

I have a confession. I buy those big bags of spinach with the best intentions. Like, โ€œIโ€™m going to make salads, Iโ€™m going to be so healthy, Iโ€™m going to make green smoothies.โ€ And then three days later itโ€™s doing that sad wilted spinach slime thing in the back of the fridge and Iโ€™m apologizing to it while I throw it away.

Until I started making these Mediterranean quesadillas.

Now that spinach bag? Gone in 24 hours. Because you sautรฉ it with red onion and oregano until it wilts down and actually tastes good, then you fold it into a crispy golden tortilla with melty mozzarella and tangy feta crumbles. It takes 15 minutes, it uses up the spinach before it goes bad, and my kids eat green stuff without acting like Iโ€™m trying to ruin their lives.

Theyโ€™re like grilled cheese that went on a little summer vacation to the Aegean โ€” salty, creamy, a little tangy, crispy outside, gooey inside. And theyโ€™re vegetarian without trying to be all โ€œhey look Iโ€™m vegetarian,โ€ you know? Just actually good.

Why These Are My Favorite Quesadillas (And Iโ€™ve Tried Like 20 Versions)

Regular quesadillas are great, but sometimes theyโ€™re justโ€ฆ cheese and tortilla. Which is fine, but I wanted more.

The spinach actually tastes good. You sautรฉ it first with olive oil and red onion until onion is soft and slightly caramelized, spinach wilts but not mushy. Add oregano, salt, pepper. Suddenly spinach isnโ€™t sad health food, itโ€™s savory and garlicky.

Two cheeses is the move. Mozzarella for that stretchy melty pull you want in a quesadilla, feta for salty tangy little bursts that make it Mediterranean, not just Mexican-ish. Together they are the dream team.

Red onion not white. Red onion gets sweet when you sautรฉ it, not sharp. Or use shallots if youโ€™re fancy. Green onion works too if thatโ€™s what you have โ€” use whatโ€™s in the fridge, Iโ€™m not gatekeeping.

No soggy middle. Trick is to not overfill and to cook the spinach mixture first to get water out. If you dump raw spinach with tomato into cheese, it steams and makes soggy quesadilla that falls apart. We sautรฉ first, problem solved.

What You Need

Makes 4 large quesadillas โ€” 2 servings as main, 4 as lunch/snack

  • 4 large flour tortillas โ€” 8-inch or 10-inch, whole wheat works too, or gluten-free if you need. Corn tortillas work but they crack more, use two per quesadilla if corn
  • 1 tbsp olive oil โ€” plus more for cooking tortillas
  • 1/2 red onion, thinly sliced โ€” about 1/2 cup
  • 3 cups fresh spinach, roughly chopped โ€” about big handfuls, looks like a lot but wilts to nothing
  • 1/2 tsp dried oregano โ€” or 1 tsp fresh oregano, or Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese โ€” low-moisture, not fresh mozzarella which is too wet
  • 1/2 cup crumbled feta cheese โ€” buy block and crumble yourself, pre-crumbled is dry
  • Optional but amazing add-ins: 1 small tomato diced and squeezed dry, 1/4 cup kalamata olives chopped, roasted red peppers chopped, handful fresh parsley, pinch red pepper flakes for heat

For serving: Greek yogurt or tzatziki, tahini drizzle, lemon wedge, hot sauce

Tortillas, spinach, two cheeses, red onion, tomato โ€” all stuff I actually have on a regular Tuesday.

How to Make Easy Mediterranean Quesadillas

Total time: 15 minutes | One skillet if youโ€™re smart about it

Step 1: Sautรฉ the veggies so they donโ€™t make soggy quesadilla

Heat 1 tbsp olive oil in large skillet over medium heat. Add thinly sliced red onion, sautรฉ 4-5 minutes until soft and starting to turn slightly golden and sweet. It should smell amazing, not sharp.

Add chopped spinach and oregano, stir โ€” spinach wilts in like 2-3 minutes. It will look like a lot then disappear into nothing, thatโ€™s normal. Season with pinch salt and pepper. Remove mixture to bowl or plate, set aside. Donโ€™t leave it in skillet or it keeps cooking.

If youโ€™re adding tomato, nowโ€™s when youโ€™d add it just 30 seconds at end so it doesnโ€™t get watery. Or just skip tomato if your tomatoes are watery โ€” your call.

Wipe skillet quickly with paper towel if needed.

Step 2: Assemble like a half-moon taco you actually want

Lay tortillas flat on counter.

On half of each tortilla, sprinkle generous layer of mozzarella first โ€” this is your glue. Then spoon warm spinach and onion mixture over cheese. Then crumble feta on top. Feta on top is important because it gets a little toasty and doesnโ€™t disappear.

If youโ€™re using olives, roasted red peppers, tomato, add now but donโ€™t overfill or youโ€™ll have quesadilla blowout when you flip. I learned this the hard way and had cheese all over my stove. Still delicious but dramatic.

Fold tortilla over to create half-moon. Press gently.

Step 3: Cook until golden and crispy and melty

Heat same large skillet or griddle over medium heat โ€” medium, not high, or tortilla burns before cheese melts.

No extra oil needed if nonstick, but I add tiny drizzle olive oil and swirl โ€” makes it crispier and golden.

Carefully place folded quesadillas in pan, 1 or 2 at a time depending on size. Cook 2-3 minutes per side until deep golden brown and cheese is melted through and you see little cheese bubbles trying to escape.

Press gently with spatula a couple times โ€” not smash, just press to get contact.

Flip carefully. I use two spatulas sometimes because Iโ€™m clumsy. Cook other side 2-3 minutes golden.

Remove, let rest 1 minute before cutting โ€” lets cheese set slightly so filling doesnโ€™t ooze everywhere. Then slice into wedges.

Medium heat, 2-3 minutes per side โ€” golden and crispy outside, melted and tangy inside.

Step 4: Dip situation

I serve these with a dollop of Greek yogurt or tzatziki and sometimes drizzle of tahini sauce or squeeze of lemon. If you like spice, hot sauce or chili flakes.

Theyโ€™re best warm, right away, when cheese is melty and tortilla is crispy. Leftovers reheat well though โ€” more on that below.

Cut into triangles, dunk in tzatziki โ€” lunch that feels fancy but took 15 minutes.

My Tips So Yours Donโ€™t Fall Apart or Get Soggy

  • Cook spinach first. Raw spinach releases water inside quesadilla and makes soggy bottom that tears. Sautรฉ first, problem solved.
  • Donโ€™t overfill. I know itโ€™s tempting to pile it high. One generous layer, not mountain. Overfilled equals cheese explosion in pan.
  • Mozzarella first, feta last. Mozzarella melts and glues everything. Feta crumbled on top stays in salty little pockets instead of disappearing.
  • Medium heat. High heat burns tortilla before cheese melts. Medium gives you time for golden and melty at same time.
  • Squeeze your tomatoes. If adding tomato, dice, then press between paper towels to get water out. Watery tomato equals soggy quesadilla.
  • Let them rest 1 minute. Cutting immediately means cheese lava pours out. One minute, cheese sets slightly, slices clean.

Variations For When Youโ€™re Bored (Or Cleaning Out Fridge)

Greek Style: Add kalamata olives chopped plus artichoke hearts chopped plus sun-dried tomatoes โ€” full Mediterranean mezze in tortilla.

Veggie Loaded: Add sautรฉed mushrooms, bell peppers, zucchini to spinach mix โ€” use up whatever veg is wilting in fridge, thatโ€™s what I did last week.

Protein Boost: Add shredded rotisserie chicken, grilled chicken, or white beans rinsed and mashed slightly โ€” turns lunch into dinner.

Yes โ€” thaw and squeeze out as much water as humanly possible. Like, really squeeze in paper towel or cheesecloth. Frozen holds tons of water and will make soggy quesadilla if not squeezed dry. Use about 10 oz frozen equals 3 cups fresh.

Can I use corn tortillas?
You can, but theyโ€™re small and crack easier. Use two small corn tortillas per quesadilla like sandwich, or look for 6-inch flour tortillas that fold better. Whole wheat flour tortillas hold together best.

Why is my quesadilla not crispy?
