Easy 1-Pan Lentil & Rice | One-Pot High-Protein Dinner

Some dinners ask a lot from you. Multiple pots, timing, chopping boards stacked, music still playing while youโ€™re trying to remember if you added salt.

This one asks almost nothing. One pan, one spoon, one cutting board if youโ€™re tidy.

I started making lentil rice on nights when I wanted something warm and grounding but didnโ€™t want to think too hard. Rice and lentils have been cooked together for a very long time โ€” mujaddara in the Levant, khichdi in India, countless village pots where two humble pantry things become more than themselves when they share heat and broth and time.

What I like about it is not just that itโ€™s easy. Itโ€™s how it settles. Lentils turn tender but keep their shape. Rice goes soft and absorbs all the savory broth. A little tomato softens into the grain. Onion sweetens slowly. Parsley at the end lifts it. Itโ€™s not flashy food, itโ€™s steady food.

And itโ€™s all in one pan.

What goes in, and why

I keep this simple on purpose, so I actually make it.

For this pot, for 4 generous servings:

  • 1 cup green or brown lentils, picked over and rinsed. Green holds shape nicely. Brown a little softer. Red will melt into the rice and make it porridge-like, which is a different dish, still good but not this one.
  • 1 cup white rice โ€” long grain or basmati. Basmati stays fluffy and separate. Rinsed until water runs a little clearer, not perfectly clear, just less cloudy.
  • 1 small yellow onion, finely diced. It will nearly disappear into the pot and leave sweetness behind.
  • 2 cloves garlic, minced fine. More if you love garlic, I often add three.
  • 1 small carrot, diced small. And one small celery rib, if you have it. Not necessary, but they add background sweetness and a little color.
  • 1 can diced tomatoes, with their juice โ€” about 14 oz. Or 1 cup fresh diced tomato when tomatoes are good. It gives a faint acidity that keeps the pot from tasting heavy.
  • 4 cups vegetable or chicken broth. Low sodium, so you can season as you go.
  • 2 tablespoons olive oil.
  • 1 teaspoon cumin, 1/2 teaspoon coriander if you have it, a pinch of smoked paprika, salt and black pepper. A bay leaf if you remember it.
  • Parsley, chopped โ€” a good handful at the end. Lemon wedges, optional but good.

Thatโ€™s the whole list. You probably have most of it now.

Easy 1-Pan Lentil & Rice

Pantry things โ€” lentils, rice, onion, broth, a can of tomatoes, some herbs. Nothing special, which is the point.

The slow part, which isnโ€™t really slow

I use a wide, heavy pan with a lid. A Dutch oven or deep skillet, something that holds heat.

Warm the olive oil over medium. Add the onion. Let it cook without rushing it. I used to turn the heat up because I was in a hurry and the onions would brown too fast and taste sharp. Over medium, 4 to 5 minutes, they soften and turn translucent and start to sweeten. That sweetness is the base of the pot.

Then garlic, 30 seconds. Youโ€™ll know it by smell.

Add carrot and celery, if youโ€™re using them, stir another minute. Add cumin and paprika. Stir once โ€” spices bloom in warm oil and smell warm and earthy.

Now lentils and rice go in together. Stir so each grain gets a little oil. Pour in tomatoes and broth. Add bay leaf and a pinch of salt, less than you think, you can add more later. Give it one good stir, scrape any bits from bottom.

Bring to a gentle boil โ€” not a rolling angry boil, just small bubbles reaching the surface. Then cover, turn heat to low. Low enough that it barely simmers.

Now leave it alone.

This is the part I like. The pan is covered. The kitchen gets quiet except for faint simmer. You can set a timer for 22 minutes and do something else. Wash the board, make a quick salad, sit for a minute.

At 20 minutes, lift the lid. Rice should have absorbed most of the broth, lentils should be tender but not falling apart. If there is still a lot of liquid, let it cook uncovered 2 to 3 minutes more. If it looks dry and rice is still firm on top, add a splash of broth or water, cover again, 3 more minutes.

Turn off heat. Keep lid on. Let it rest 10 minutes. This rest matters โ€” rice finishes steaming, lentils settle, texture evens out. If you skip it, bottom is wetter than top.

Bring to a gentle bubble, cover, low heat, and leave it alone โ€” 22 minutes of mostly doing nothing.

To serve

Remove bay leaf. Fluff gently with fork, not stirring hard. You want grains separate, not mashed.

Add parsley โ€” a good handful, chopped. Taste. Salt, pepper. A squeeze of lemon if you have it brightens the whole pot, especially because lentils can taste flat without acid.

Spoon into bowls. Itโ€™s good as is. Itโ€™s also good with a spoonful of plain yogurt or labneh on top, or a drizzle of olive oil that pools a little. Crusty bread on the side if you like to mop up.

I often eat it with just lemon wedge and maybe a simple cucumber salad.

Parsley and lemon at the end lift it โ€” simple bowl, enough for dinner.

Small details that make a difference

  • Rinse both lentils and rice, but separately. Lentils can have tiny stones, give them a quick look. Rice rinsed until water is less cloudy keeps pot from getting gummy.
  • Cut carrot and celery small. If they are big chunks they stay hard while rice overcooks. Small dice, about pea size.
  • Donโ€™t add all the salt at start. Lentils can toughen if salted heavily early. Salt lightly, then adjust at end.
  • If you use brown rice, it needs more time and more liquid. For this one-pan version, white or basmati keeps it simple and 22 minutes. Brown rice version needs about 40 minutes and 1 cup extra broth.
  • If pot looks too thick halfway, add a little broth. If too soupy at end, cook uncovered a couple minutes. Lentils vary, broth levels vary, itโ€™s okay to adjust.

Other ways Iโ€™ve made it

Once you have the base, itโ€™s easy to change without adding another pan.

  • With kale: Stir in a couple handfuls of chopped kale in last 5 minutes, cover, it wilts into pot.
  • With spinach and feta: Like my other Mediterranean pots, add spinach at end and crumbled feta after heat off โ€” feta softens into salty pockets.
  • With sausage: Brown sliced kielbasa or chicken sausage with onion at start, then continue same. Adds smokiness.
  • With cumin and turmeric: Add 1/2 teaspoon turmeric with cumin for warmer color and earthiness.
  • With lemon and dill: Skip paprika, use dill and lemon zest at end, more Mediterranean.

None of these need another pan, just stirred in at beginning or end.

Keeping it

This pot keeps well, which is part of why I like it for weekdays.

In fridge, covered, 4 days. It thickens as it sits because lentils absorb broth. To reheat, add splash water or broth, warm over medium low or microwave with a little water, stir.

Freezes well for 2 months. Cool completely, portion into containers, freeze. Thaw overnight in fridge, reheat with splash broth. Texture stays good because green lentils hold.

If you have leftover that feels too thick for a bowl, add broth and turn into soup. Add water, more cumin, squeeze lemon, it becomes a different dinner.

A small note on why one pan matters

I have days when I can cook elaborate meals with many steps. And days when I canโ€™t. On days when I canโ€™t, I still want something warm that wasnโ€™t from a box, that I made, that feels like I took care of myself and whoever is at table.

One pan means less cleaning, less decision making, less standing. It means I can put pot on, set timer, and sit down for a few minutes while it does its work. It means leftovers for lunch without extra effort.

Thatโ€™s why I keep coming back to this.

If you make it, let it rest those 10 minutes. Then parsley, lemon, olive oil if you like. Eat it warm.

Heat the olive oil in a large Dutch oven or deep skillet with a tight-fitting lid over medium heat. Add the diced onion and cook for 4โ€“5 minutes, until softened and translucent. Stir in the garlic and cook for 30 seconds until fragrant. Add the carrot and celery (if using) and cook for 1 more minute.

Toast the spices

Add the cumin, coriander, and smoked paprika to the vegetables. Cook for about 30 seconds, stirring constantly, until very fragrant.

Simmer & Rest

Add grains & liquid

Stir in the rinsed lentils and rice, coating everything with the seasoned oil. Add the diced tomatoes, broth, bay leaf, and a light pinch of salt and pepper. Bring the mixture to a gentle boil.

Simmer

Cover with a lid and reduce the heat to low. Cook for 20โ€“22 minutes, or until the rice is tender, the lentils are cooked through, and most of the liquid has been absorbed. (If it looks dry before the rice is done, add a splash of broth. If it’s too wet, cook uncovered for 2 mins).

The crucial rest

Turn off the heat and leave the lid on. Allow the lentil rice to rest undisturbed for exactly 10 minutes to finish steaming. This prevents mushy rice!

Finish and serve

Remove the lid and discard the bay leaf. Fluff gently with a fork. Stir in the chopped parsley and adjust salt and pepper if needed. Serve warm with fresh lemon wedges!

Letting the dish rest off the heat for 10 minutes with the lid on allows the remaining moisture to distribute evenly, resulting in perfectly fluffy grains.

Delicious Variations

Spinach & Feta

Stir in 2 handfuls of baby spinach during the last few minutes of cooking to wilt, and finish individual bowls with crumbled feta.

Sausage Version

For a non-vegetarian option, brown sliced chicken sausage or smoky kielbasa in the oil with the onions before continuing!

Turmeric Glow

Add ยฝ teaspoon of ground turmeric along with the cumin for extra warmth, earthiness, and a beautiful golden color.

Kale & Lemon

Add chopped, de-stemmed kale during the final 5 minutes of simmering. Top with extra lemon zest and fresh dill to serve.
