We sautรฉ onion and garlic first (or you can skip and dump if lazy, Iโ€™ve done both), add carrots, celery, bay leaf, crushed tomatoes, broth, Italian seasoning or that seasoning packet, and the lentils soak it all up.   • 1 Tbsp olive oil โ€” for sautรฉing onion and garlic if you have 4 minutes, optional but adds flavor
  • 1 medium yellow onion, finely diced
  • 2 garlic cloves, minced โ€” or 3 if youโ€™re garlic person like me
  • 7 cups chicken broth or vegetable broth โ€” low sodium so you control salt
  • 2 carrots, cut into 1/2 inch pieces โ€” about 1 cup diced
  • 2 celery ribs, cut into 1/4 inch pieces โ€” about 1 cup diced
  • 1 bay leaf
  • 1 can (14 oz) crushed tomatoes
  • 1 package (15.5 oz) Hurstโ€™s Garlic and Herb Lentils with seasoning packet included โ€” or 1 1/2 cups green or brown lentils plus your own seasoning: 1 tsp Italian seasoning, 1/2 tsp garlic powder, 1/2 tsp onion powder, pinch salt and pepper. Green or brown hold shape best, red turns to mush for this.
  • Salt and pepper to taste at end
  • Fresh parsley chopped for garnish, lemon wedge optional for brightness

How to Make Ultimate Slow Cooker Herb Garlic Lentils

Prep: 15 min | Cook: 6 hours low or 5 hours high | Total: hands-off cozy

Step 1: Quick sautรฉ if you have time (adds flavor but optional)

If youโ€™re making it in slow cooker and have 4 minutes, heat pan on stove over medium-high, add olive oil, add onion, sautรฉ 4-5 minutes until soft and sweet. Add garlic, sautรฉ 30 seconds until fragrant. Then transfer onion and garlic to slow cooker.

If youโ€™re in Instant Pot using sautรฉ setting, do same right in pot. If youโ€™re truly dump-and-go, skip sautรฉ and just add raw onion and garlic to slow cooker โ€” still good, just slightly less sweet depth.

Step 2: Dump everything in slow cooker

Into slow cooker add broth, carrots, celery, bay leaf, crushed tomatoes, lentils and HALF of seasoning packet if using Hurstโ€™s โ€” save other half for later. If using your own seasoning, add Italian seasoning now.

Stir to combine.

Step 3: Cook low and slow

Cover and cook on low for about 6 hours, or until lentils are tender. If cooking on high, about 5 hours. Red or yellow lentils cook faster (4 hours high), green/brown need full 6.

No need to stir during, but if you walk by and want to, you can. Lentils will absorb broth and get thick and creamy.

Step 4: Finish and season

Remove lid, remove bay leaf, stir in rest of seasoning packet. Taste โ€” add salt to taste and pepper. It needs salt at end, donโ€™t salt too much at beginning or lentils can stay tough.

If you want more soupy, add splash broth or water. If you want thicker, let sit with lid off 10 minutes โ€” it thickens as it cools.

Serve garnished with fresh parsley and lemon wedge squeeze for brightness.

My Tips So Yours Is Creamy Not Crunchy or Mushy

  • Green or brown lentils for this, not red. Red lentils break down into puree and turn to dal โ€” delicious but not what we want here which is tender bites that hold shape. Green/brown hold shape, creamy inside.
  • Rinse lentils. Put in mesh strainer, rinse quickly to get rid of dust. Takes 10 seconds.
  • Donโ€™t salt too much at start. Salt can make lentil skins tough if added too early. Add half seasoning early, rest plus salt to taste at end.
  • Donโ€™t add zucchini early if using. Some versions add zucchini or diced tomatoes with zucchini โ€” add zucchini last hour or it turns to mush. I add carrots and celery at start because they hold up.
  • If you like sausage: Brown 1 lb mild Italian sausage with diced leek or onion in skillet, then add to slow cooker with lentils, carrots, celery, tomatoes, seasoning mix, 9 cups water, cook high 5 hours. Adds meaty, but vegan version is just as cozy.
  • If too watery: Leave lid off last 20-30 minutes, or mash few lentils with spoon to thicken. If too thick, add splash broth.

What to Serve With It

This is hearty enough to be meal on its own, but hereโ€™s how I actually serve it:

  • Over rice: White rice or brown rice soaks up sauce, makes it even more filling. My kids love it over rice.
  • With crusty bread: Sourdough or garlic bread for dipping โ€” that creamy broth plus bread is everything.

Can I make this in Instant Pot?
Yes โ€” sautรฉ onion and garlic using sautรฉ setting, add broth, carrots, celery, bay leaf, tomatoes, lentils and half seasoning packet, cover, pressure cook 12 minutes, natural release 10 minutes, then quick release, stir in rest of seasoning, salt to taste.

Do I need to soak lentils?
No โ€” lentils donโ€™t need soaking like beans. Just rinse. Thatโ€™s why they are weeknight hero.

Can I make it without tomatoes?
Yes โ€” skip crushed tomatoes and add extra 1 cup broth. More herby garlic flavor, less tomatoey. Still delicious.

Whatโ€™s in the seasoning packet?
Hurstโ€™s Garlic & Herb packet is basically Italian herbs, garlic, onion, pepper. If not using packet, use 1 tsp Italian seasoning plus 1/2 tsp garlic powder plus pinch salt and pepper, add at end to taste.

Why are my lentils still crunchy?
Either old lentils (lentils from back of pantry for 2 years take longer), or not enough liquid, or salted too early, or cooked on low but slow cooker runs cool. Add extra 1 cup water or broth and cook 1 more hour.

Can I add meat?

Instructions

Prep the lentils

Rinse the dried lentils thoroughly under cold water in a fine-mesh strainer and remove any small debris.

Load the slow cooker

Add the rinsed lentils, diced onion, minced garlic, carrots, celery, vegetable broth, olive oil, thyme, oregano, bay leaf, salt, and pepper directly to your slow cooker.

Stir everything together until well combined. Cover and cook on Low for 6โ€“8 hours or on High for 3โ€“4 hours.

Once the lentils are tender and have absorbed most of the liquid, locate and carefully remove the bay leaf.

Stir in the fresh lemon juice. (If you are using optional fresh spinach, stir it in now and let it wilt for 5 minutes in the residual heat).
