This one works because it keeps the flavor pillars that make Caesar taste like Caesar:

1. Greek yogurt plus tiny olive oil equals creamy plus rich. Greek yogurt is the base, but a little olive oil makes it silky and rich like classic dressing, not just tangy yogurt. Plus it makes it cling to lettuce instead of sliding off.

2. Worcestershire plus Dijon plus garlic plus lemon. Worcestershire brings that deep umami that you usually get from anchovies. Dijon adds tang and helps emulsify. Fresh garlic pressed, lemon juice plus zest for brightness — that’s the zing.

3. Parmesan, real Parmesan. Very finely grated Parmesan melted into dressing plus more for showering on top. Salty, nutty, essential. Pre-grated powder stuff doesn’t melt and tastes like cardboard — grate fresh if you can.

4. Anchovy optional, but highly recommended. I was scared of anchovies for years. Anchovy paste in a tube is mellow, not fishy, just salty umami depth. Or use capers plus a little brine — same briny punch without fish if you’re vegetarian-ish. Either way you get that authentic Caesar depth.

5. Homemade croutons that take 8 minutes. Store-bought croutons are fine, but sourdough bread torn into pieces, sprayed with olive oil, salt and pepper, baked 400°F 8-10 minutes until crispy — game changer. Crunchy outside, chewy inside, so much better than hard little rocks from bag.

What You Need

Serves 4 as side, 2-3 as main with chicken

For the Greek Yogurt Caesar Dressing (makes about 3/4 cup):

  • 1/3 cup nonfat or 2% Greek yogurt — plain, not flavored. Full-fat works too and is creamier. My favorite for this is 2% — creamy but still light
  • 1/4 cup freshly grated Parmesan cheese, very finely grated — plus more for garnish
  • 2 tbsp fresh lemon juice — about 1 small lemon, fresh, not bottled
  • 3/4 tsp lemon zest — tiny bit adds brightness without extra sour
  • 1 tbsp extra virgin olive oil — good quality, fruity
  • 2 1/2 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 3 cloves garlic, pressed or minced super fine — or 1 clove if you’re garlic-shy
  • 1/2 tsp anchovy paste optional — or 2 tsp capers plus little brine for vegetarian
  • Generous pinch salt and black pepper
  • 1-2 tbsp water to thin if needed — dressing should be creamy but pourable

For the Salad:

  • 1 large head romaine lettuce, torn into bite-size pieces — about 6 cups chopped, wash and dry REALLY well or dressing slides off wet leaves
  • 2 slices sourdough bread — or any bread, for croutons. Or store-bought if lazy, I’ve been there
  • Cooking spray or 1 tbsp olive oil for croutons
  • Salt and pepper for croutons
  • 1/4 cup grated Parmesan for garnish
  • Optional: 3 slices bacon cooked crisp and crumbled, or vegetarian bacon, or grilled chicken, or boiled eggs

How to Make Simple & Healthy Caesar Salad

Total time: 10-15 minutes | No cooking except croutons (optional)

Step 1: Make croutons if you want to be fancy (8-10 minutes)

Preheat oven or toaster oven to 400°F. Tear or chop sourdough into bite-size pieces. Spray with cooking spray or toss with 1 tbsp olive oil, sprinkle salt and pepper. Spread on baking sheet, bake 8-10 minutes until crispy and golden. Remove, set aside.

If using store-bought, skip this and go straight to dressing. I’ve done both, homemade is better but store-bought saves you when you’re hungry now.

Step 2: Whisk Greek yogurt Caesar dressing

In small bowl or mason jar, combine Greek yogurt, Parmesan, lemon juice, lemon zest, olive oil, Worcestershire, Dijon, pressed garlic, anchovy paste or capers.

Whisk or shake jar really well — screw lid tight and shake. Season with black pepper and pinch salt. Taste — want more lemon? Add. More garlic? Add. It should be tangy, garlicky, salty, creamy.

If too thick — Greek yogurt can be thick — add 1-2 tbsp water to thin until it drizzles nicely off spoon but still coats. Place in fridge 15 minutes if you can — flavors meld and it gets even better. But you can use immediately if you’re impatient like me.

Whisk, shake, taste — tangy, garlicky, creamy, still tastes like real Caesar but light.

Step 3: Assemble and toss like you mean it

Wash romaine, dry REALLY well — salad spinner or pat with kitchen towel. Wet lettuce equals watery salad that dressing slides off. Dry is key.

Tear into bite-size pieces, place in large bowl. Add about half the dressing to start, toss well with hands or tongs so every leaf is coated. Add more dressing as needed — you may not need all, depending on how dressed you like it. I like mine well-coated but not swimming.

Top with homemade croutons, extra grated Parmesan, bacon crumbles if using, cracked black pepper. Serve immediately while croutons are crunchy.

My Tips So Yours Is Creamy Not Sad

  • Dry your lettuce. I know I said it twice, but it’s the number one Caesar fail. Wet leaves repel dressing and you get watery pool at bottom of bowl. Spin dry, then pat.
  • Grate Parmesan super fine for dressing, shave bigger for topping. Finely grated melts into dressing seamlessly. Shaved curls on top look fancy and give salty bites.
  • Press garlic, don’t mince big chunks. Pressed or microplaned garlic distributes evenly so you don’t bite big raw garlic chunk. Unless you like that, then go for it.
  • Let dressing sit 15 minutes if you have time. Garlic mellows and Worcestershire and Parmesan meld. It goes from good to “wow this tastes like restaurant” in 15 minutes.
  • Don’t drown it. Start with half dressing, toss, add more. You can always add, can’t take away. Leftover dressing keeps 3 days in fridge and is amazing on chicken or as veggie dip.
  • Croutons last minute. Add croutons right before serving so they stay crispy. If you toss croutons and let sit 20 minutes, they go soggy and sad.

Make It a Meal

This salad is great as side, but I often make it dinner:

Chicken Caesar: Add sliced grilled chicken breast. My go-to — season chicken with salt, pepper, garlic, grill 5-6 min per side. Slice over salad.

Shrimp Caesar: Add garlic shrimp sautéed 2-3 minutes. Shrimp plus Caesar is fancy but fast.

Tofu Caesar: Breaded tofu cubes — same as my other protein add but vegetarian, bake until crispy and toss in.

Egg Caesar: Add soft or hard boiled eggs quartered — adds protein and makes it more filling, plus that yolky creaminess.

No anchovies? Use capers plus brine — 2 tsp capers chopped plus little brine gives briny umami without fish. I do this when I’m out of anchovy paste.

  • Dressing: Fridge in jar or airtight container, 3-4 days. It thickens a bit — stir and add splash water to loosen.

  • Croutons: Airtight container room temp 3-4 days, or freeze up to 1 month. Re-crisp in oven 350°F 5 minutes.
  • Assembled salad: Best eaten immediately. If you have leftover dressed salad, it will get soggy — store lettuce, dressing, croutons separately and assemble fresh.

Can I make it dairy-free?
Use coconut yogurt or almond milk yogurt plus dairy-free Parmesan. Still good, though tangier. Use olive oil a bit more for richness.

Can I use kale instead of romaine?
