Chickpea Blondies — Fudgy, Protein-Packed & No One Will Guess

Okay, I need you to trust me for like 45 seconds.

I’m about to tell you there are CHICKPEAS in these blondies. Like, actual garbanzo beans from a can that you usually rinse for salad. And you are going to make them, and your family is going to eat them, and NO ONE will guess.

I know, because I fed them to my husband who claims he can “taste healthy from a mile away” and has a sixth sense for hidden vegetables. He ate two, said “these are really good, what are they, peanut butter chocolate chip?” And I said “chickpeas.” And he looked at me like I’d just told him the dog does his taxes.

These are fudgy, not cakey. Think cookie dough meets blondie, with crispy edges and a gooey middle that barely sets — that’s the secret, you pull them when they look slightly underdone. They’re naturally gluten-free, high protein if you want, and they take 10 minutes plus one food processor. No flour, no weird flours that cost $9 a bag, just a can of beans.

I started making them because I had a can of chickpeas that was about to expire and a craving for something sweet that wasn’t going to put me in a sugar coma. Now I make them every week and keep them in the fridge for that 3pm “I need something” moment.

Let’s make the blondies that taste like you’re cheating but you’re actually being kind of virtuous. Ish. At least protein-virtuous.

Why Chickpea Blondies Actually Work (And Don’t Taste Like Hummus)

I know your brain is going “but chickpeas are savory?” Here’s why it works:

1. Chickpeas are basically neutral when sweetened. When you rinse them really well (this is important, rinse off that can juice), and blend with peanut butter, maple syrup, and vanilla, they just become creamy, protein-packed mush that acts like flour and butter combined. No beany taste if you rinse well. Promise.

2. They stay fudgy, not dry. Regular flour blondies can go cakey if you overbake 2 minutes. Chickpea blondies stay moist and fudgy even if you accidentally leave them in an extra 3 minutes because you were helping with homework. The batter itself looks like cookie dough, not cake batter.

3. Protein without protein powder panic. One can of chickpeas plus peanut butter plus oats is already like 15g protein for the whole pan. Add a scoop of vanilla protein powder and you’re at 40g plus. Great for after-school snack that actually holds kids over until dinner.

4. One food processor, one bowl, one pan. No creaming butter, no “bring to room temperature.” Dump, blend, fold in chocolate chips, bake. My kind of baking.

What You Need

Makes one 8×8 pan — 12 blondies

  • 1 can (15 oz) chickpeas, drained, rinsed REALLY well, patted dry — this is the non-negotiable rinse, get rid of that chickpea can taste
  • 1/2 cup peanut butter — or almond butter, cashew butter, or sunflower seed butter for nut-free. Peanut butter is classic blondie flavor. Use creamy, not super drippy natural or batter gets too wet
  • 1/3 cup plus 2 tbsp maple syrup — or honey, agave. Maple is my fave because it makes them taste like brown sugar blondies
  • 1 tsp vanilla extract — the good vanilla, not imitation if you can
  • 1/4 cup oat flour — just blend oats in blender, or use almond flour. Certified GF if needed. Or regular AP flour 1/4 cup works too
  • 1/4 tsp baking soda plus 1/4 tsp baking powder — little lift so they’re not bricks
  • 1/4 tsp salt
  • 1 tsp cinnamon optional — I like it, makes them taste like cookie dough
  • 1/2 cup chocolate chips — plus extra for sprinkling on top because we’re not animals

High-protein version add:

  • 1 scoop (30g) vanilla protein powder — whey or vegan. If you add this, add 2 tbsp milk (any kind) because protein powder dries batter a bit

One can of chickpeas plus pantry staples — no weird health food store run required.

How to Make Fudgy Chickpea Blondies

Total time: 5 min prep plus 22 min bake — yes, really

Step 1: Rinse those chickpeas like you mean it

Open can, dump into colander, rinse under cold water for a solid 30 seconds, shake, rinse again. You want to get rid of all that aquafaba goop. Pat dry with paper towel a little. If you leave too much water, batter gets loose.

Preheat oven to 350°F. Grease 8×8 pan or line with parchment with overhang.

Step 2: Blend everything except chocolate chips

In food processor, add rinsed chickpeas, peanut butter, maple syrup, vanilla. Blend until smooth — scrape sides, blend again. It should look like thick hummus-like cookie dough, slightly grainy but mostly smooth.

Add oat flour, cinnamon, baking soda, baking powder, salt — and protein powder plus splash milk if using. Blend again until creamy and smooth.

Take lid off, taste (yes, it’s safe, no eggs). Should taste like sweet peanut butter cookie dough, not chickpeas. If you taste chickpeas at all, blend 15 seconds more and add tiny extra 1/2 tsp vanilla.

Dump, blend, scrape, blend — should look like thick cookie dough, not watery.

Step 3: Chocolate chips are not optional (I mean they are, but why?)

Remove blade (so you don’t chop chips into dust) and stir in 1/2 cup chocolate chips by hand. Don’t process chips unless you want chocolate swirl blondies.

Pour into greased 8×8 pan. It will be thick and sticky — spread with spatula. Sprinkle extra chocolate chips on top because pretty matters.

Step 4: Bake until barely done — this is key

Bake 22-24 minutes. Edges should be golden and set, center should look slightly underdone and just a little jiggly, toothpick should come out with moist crumbs, not clean. If you wait until toothpick is clean, you’ll have dry blondies. They firm up as they cool — that fudgy middle sets into cookie dough fudge.

Let cool at least 1 hour before cutting. I know, torture. But if you cut hot, they crumble. They are still a little fragile warm, they set into fudgy squares as they cool. If you absolutely cannot wait, eat it with a spoon straight from pan, I do it all the time.

Let them cool a full hour — they go from fragile to perfectly fudgy squares that hold together.

My Tips So Yours Are Fudgy Not Dry or Beany

  • Rinse, rinse, rinse. I can’t say it enough. That can liquid tastes like beans. Rinse well, your blondies will thank you.
  • Don’t add more milk unless you added protein powder. Batter should be sticky and dense — don’t thin it or they’ll be cakey not fudgy.
  • Don’t overbake. This is the number one blondie killer. 22 minutes is usually perfect. They will look underdone. Pull them anyway. They set as they cool, this is the secret to staying moist.
  • Food processor beats blender. Blender struggles with thick batter. Food processor makes it smooth in 30 seconds. If you only have blender, blend chickpeas and oats first with hand blender, then mix rest by hand — works but more steps.
  • Chocolate chips on top matter. They melt a little and make that bakery look. Don’t skip.

Variations Because I Can Never Leave a Recipe Alone

Tahini Caramel Date: Replace peanut butter with tahini, use chopped dates instead of some chocolate chips, drizzle tahini plus agave mixed with milk on top after cooling — vegan caramel vibe, so good.

Cookie Dough: Add extra 2 tbsp chocolate chips plus sprinkles, eat dough raw if you want (no eggs, safe) or bake.

Peanut Butter Cup: Press mini peanut butter cups into top before baking — extra peanut butter pockets.

Nut-Free SunButter: Use sunflower seed butter, oat flour, allergy-friendly chocolate chips — school-safe.

Flourless Sugar-Free High Protein: Use 1 1/2 cups chickpeas plus vanilla protein powder plus unflavored collagen, 150g applesauce, 3 tbsp almond butter, baking powder, chocolate chips sugar-free — gluten-free, sugar-free, flourless, still fudgy.

Low-fat: Replace half peanut butter with applesauce — less fat, still fudgy, a little less rich but still yummy.

Storage — If They Last, Which Is Iffy

  • Room temp: Covered container 2-3 days, but they are fudgy so fridge is better.
  • Fridge: Airtight container 5-7 days, stays fudgy and firm. My favorite way — cold fudgy blondie straight from fridge with coffee.
  • Freezer: Freeze cut squares up to 3 months. Thaw overnight fridge or microwave 15 seconds for warm gooey. I freeze half immediately so I don’t eat whole pan in one sitting — self-control strategy.
  • Make-ahead batter: You can make batter and keep covered fridge 24 hours before baking — flavors actually meld more.

They’re rich, so I like something light or something that makes it feel like dessert-dessert:

Instructions

Blend the Batter

Prep the Chickpeas

Drain the chickpeas and rinse them thoroughly under cold water for about 30 seconds. Rinse again, then pat them dry with a paper towel. Removing the canning liquid prevents a bean-like flavor.

Prep the Pan

Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper, leaving an overhang for easy removal later.

Blend Wet Ingredients

Add the rinsed chickpeas, peanut butter, maple syrup, and vanilla extract to a food processor. Blend until very smooth, scraping down the sides as needed.

Add Dry Ingredients

Add the oat flour, baking soda, baking powder, salt, and cinnamon. (If making the high-protein version, add the protein powder and 2 tbsp milk now). Blend again until the mixture is thick, creamy, and smooth.

Fold & Bake

Add the Chocolate

Remove the food processor blade and stir the chocolate chips into the batter by hand.

Fill the Pan

Transfer the thick batter to the prepared baking pan. Spread it evenly with a spatula and sprinkle a few extra chocolate chips over the top.

Bake for 22–24 minutes. The edges should be golden and set, while the center should still look slightly underdone and soft. A toothpick should come out with moist crumbs rather than completely clean.

Cool & Serve

Allow the blondies to cool in the pan for at least 1 hour before slicing. They will firm up as they cool, creating that fudgy texture. Lift using the parchment paper and cut into 12 squares!

Replace peanut butter with tahini, and add chopped dates instead of chocolate chips. Drizzle with tahini and agave after cooling!
