Ingredients
For the Graham Cracker Crust:
- 1 1/2 cups graham cracker crumbs — about 10-12 full sheets, or 1 cup if using loaf pan
- 3 tbsp granulated sugar
- Pinch salt
- 1/3 cup unsalted butter, melted
I use brown sugar in my 9×13 version for deeper flavor — 1/3 cup dark brown sugar plus 2 cups crumbs plus 1/2 cup butter — if you like chewier crust.
For the Creamy Cheesecake Filling:
- 12 oz cream cheese (1 1/2 blocks), softened to room temp — must be room temp or it will be lumpy
- 6 oz white chocolate, finely chopped — my secret stabilizer, makes it sliceable without gelatin
- 3/4 cup heavy cream, cold — for whipping
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 tsp fresh lemon juice
- 1/2 cup of the blueberry sauce (from below), cooled
For the Blueberry Topping & Swirl (two uses):
- 2 cups fresh or frozen blueberries — divided: 1 cup for sauce swirled in, 1 cup for topping
- 1/2 cup granulated sugar, divided
- 1/2 cup water, divided
- 2 tbsp cornstarch
- 1 tbsp fresh lemon juice plus zest of 1 lemon
- 1 tsp vanilla
For Serving (optional):
- Extra whipped cream: 1/2 cup heavy cream plus 1 tsp sugar
- Fresh blueberries, mint, lemon twists

How to Make Easy No-Bake Blueberry Cheesecake
Total Time: 30 min prep plus 6 hours chill (preferably overnight)
Yield: 8-12 slices depending on pan
Step 1: Make the Crust
- In food processor, crush graham crackers to fine crumbs. Or put in zip bag and crush with rolling pin.
- Dump crumbs into bowl, stir in sugar, salt, melted butter until evenly moistened like wet sand.
- Press firmly into bottom of springform pan or dish. Use bottom of glass to really tamp it down — firm crust equals clean slices.
- Place pan in freezer 20 minutes while you make filling. This quick chill prevents soggy crust.
Press firmly with a glass — tight crust holds up to that creamy filling.
Step 2: Make the Blueberry Sauce (for swirl plus topping)
You’ll make one sauce but use it in two places.
- In small saucepan, combine 1 cup blueberries, 2 tbsp water, 3 tbsp sugar.
- Bring to very gentle simmer over medium-low, stirring, until juices bubble and berries collapse, about 8-10 minutes. The berries should soften and release color.
- In small bowl, whisk remaining 1 tbsp water into 1 tbsp cornstarch until smooth — this is slurry for thickening.
- Stir slurry into bubbling blueberries, bring back to simmer 1 minute until thickened and glossy. It should coat spoon.
- For topping batch: In separate pan or same pan after reserving, repeat with remaining 1 cup blueberries, 1/4 cup sugar, 2 tbsp water, lemon zest plus lemon juice, cook 5-7 minutes until thick but some berries still whole. Remove from heat, stir in lemon juice and vanilla, let cool completely. Store in fridge.
My trick: I blend half the first batch for swirl (so filling is purple) and leave topping batch chunky for texture.
Step 3: Make the Whipped Cream
In medium bowl with electric mixer, beat 3/4 cup very cold heavy cream until medium peaks form — peaks that hold but tip droops slightly. Scoop into separate bowl and keep cold. Don’t over-beat to stiff — you want foldable softness.
Step 4: Make Cheesecake Filling
- Melt white chocolate: microwave at 50% power in 30-sec bursts stirring, or double boiler, until smooth. Keep warm but not hot.
- In same mixing bowl (no need to wash), beat softened cream cheese, powdered sugar, vanilla, lemon juice until creamy smooth, about 1 minute. Scrape sides.
- Add melted warm white chocolate, beat to combine — this is what helps no-bake cheesecake set without gelatin.
- Add 1/2 cup cooled blueberry purée (from first sauce batch), mix until evenly purple.
- Using spatula, gently fold whipped cream into cream cheese mixture. Fold by scraping outside of bowl and down middle, turning bowl, so you don’t deflate air. This folding keeps it light and mousse-like.
Quick stovetop blueberry sauce — cornstarch plus lemon keeps it glossy not watery.
Step 5: Assemble & Chill
- Remove crust from freezer, scrape creamy purple filling over crust, smooth top with offset spatula or spoon flat.
- Cover with plastic wrap, place in fridge at least 4 hours, ideally 6 hours or overnight until fully set. If using gelatin version, 1 hour enough to hold topping then final 6 hours.
- Once filling is set enough (1 hour), spread cooled chunky blueberry topping evenly over top. Then continue chilling.
Step 6: Serve
Run thin knife around edge of springform, release pan. If loaf pan, lift using parchment handles.
Slice with hot, clean knife — run knife under hot water, wipe between slices for clean cuts.
Top each slice with extra whipped cream, fresh blueberries, mint if you want fancy.
Tips for Perfect No-Bake Cheesecake
- Room temp cream cheese is non-negotiable. Cold cream cheese equals lumpy filling. Leave out 1 hour or microwave 10 sec at a time.
- Cold heavy cream whips better. Chill bowl plus beaters 10 min in freezer before whipping.
- Don’t skip white chocolate. It adds sweetness but also structure. If you must skip, add 1 tsp gelatin bloomed in 2 tbsp cold water, melted, tempered into filling.
- Press crust HARD. Use flat glass, press firm. Loose crust crumbles when slicing.
- Cool sauce completely before adding to filling. Warm sauce will deflate whipped cream and make dense cheesecake.

9×13 Crowd Version: Double crust (2 cups crumbs plus 1/2 cup butter plus 1/3 cup brown sugar) press into 9×13 dish. Double filling (16 oz cream cheese plus 12 oz whipped topping or 2 cups whipped cream plus 1 1/2 cups powdered sugar plus 2 tbsp milk plus vanilla). Top with blueberry pie filling or homemade sauce. Chill 6 hours. Serves 15.
Mini Cheesecakes in Cupcake Liners: Press crust into muffin tin lined with cupcake liners, fill, chill. Family favorite, easy to serve.
Lemon Blueberry Swirl: Add zest of 2 lemons plus 2 tbsp lemon juice to filling. Swirl extra lemon curd on top with blueberry sauce.

Chocolate Crust: Use Oreo crumbs (about 20 Oreos) instead of graham for chocolate-blueberry combo.
Storage
- Fridge: Covered, 4-5 days. Without topping, best within 3 days for freshest.
- Freezer: Freeze WITHOUT topping for up to 1 month. Wrap tightly in plastic plus foil. Thaw overnight in fridge, then add topping. With topping freezes okay but sauce may weep a little.
- Make-ahead: Make crust plus filling day 1, topping day 2. Or make whole cheesecake up to 2 days before party — it actually improves.

Why didn’t my no-bake cheesecake set?
Usually: whipped cream not stiff enough, warm blueberry sauce deflated it, or didn’t chill long enough. Chill overnight and use white chocolate method — it sets more reliably than just cream cheese.
Can I use frozen blueberries?
Yes! No need to thaw. They break down even faster and give more juice — perfect for sauce. Use same amount, add 2 extra minutes cooking.
Do I need gelatin?
Not for this version — white chocolate plus whipped cream sets it. If you prefer gelatin for extra firm slice, bloom 10g gelatin in 50ml cold water 10 min, microwave 10-15 sec melted, temper with few tbsp filling then mix into rest, chill 1 hour before adding topping.
Can I make it in a loaf pan?
Absolutely — line 8 or 9” loaf pan with parchment with overhang handles, press crust, fill, chill 4 hours or overnight, lift out, cut into 5-6 thick slices. Super cute single servings.
How do I get clean slices?
Hot knife: dip knife in hot water, wipe dry, slice, wipe, repeat. Chill cheesecake very cold — overnight is best.

Crush the graham crackers into fine crumbs. Combine the crumbs with sugar, salt, and melted butter until the mixture resembles wet sand.
Combine 1 cup blueberries, 2 tablespoons water, and 3 tablespoons sugar in a small saucepan. Simmer over medium-low heat for 8–10 minutes, until the berries soften and release their juices.
Whisk 1 tablespoon water with 1 tablespoon cornstarch to create a slurry. Stir into the bubbling blueberry mixture and simmer for about 1 minute, until glossy and thickened. Set aside to cool completely.
Beat the cold heavy cream with an electric mixer until medium peaks form. Keep chilled in the fridge until ready to use.
Beat the softened cream cheese, powdered sugar, vanilla, and lemon juice until smooth and creamy. Add the melted white chocolate and mix until combined.
Mix ½ cup of the completely cooled blueberry sauce (from step 4) into the cream cheese mixture until evenly colored and flavored.
Remove the crust from the freezer. Spread the blueberry cheesecake filling evenly over the crust and smooth the top.
Cover and refrigerate for at least 4–6 hours (preferably overnight) until completely set and firm.
