Easy 1 Pan Maple Glazed Salmon With Sweet Sauce For Salmon
Okay, I have to tell you something that might be controversial in the food blog world.
I donโt love salmon when itโs trying to be too healthy. You know the one โ just lemon and dill and โlet the natural flavors shine.โ Maโam, the natural flavor is FISH. I need sauce. I need sticky. I need something I can spoon over rice and pretend itโs takeout.

The Cast โ What You Need
For the Salmon:
- 4 salmon fillets, about 4-6 oz each, skin-on or skin-off both work, pat them DRY
- 1/2 tsp salt, 1/4 tsp black pepper
- 1 tbsp sesame oil โ or olive oil, but sesame adds that toasty Asian vibe
- 1 tbsp unsalted butter for the sauce
For the Sweet Maple Sauce (aka the good stuff):
- 2 cloves garlic, minced โ fresh, not the jar stuff if you can help it
- 1 tsp fresh ginger, grated โ about thumbnail size piece, peels with spoon
- 1/2 cup pure maple syrup โ not pancake syrup, real maple. The dark amber stuff is best.
- 3 tbsp low-sodium soy sauce โ or tamari, or coconut aminos if gluten-free
- Optional but so good: 1/2 cup sweet chili sauce if you like extra sticky-sweet, or 1 tbsp Dijon for mustardy tang
- Garnish: sesame seeds, sliced green onions, lemon wedge
Thatโs it. If you have those 5 things, you have dinner.

How to Make Easy 1 Pan Maple Glazed Salmon
Total time: 20 minutes | Serves 4 | One skillet to clean
Step 1: Sear the salmon like you mean it
Pat your salmon fillets REALLY dry with paper towel. I mean really dry. This is how you get that golden crust instead of sad steamed fish.
Season both sides with salt and pepper.
Heat sesame oil in large skillet over medium heat until shimmery. Lay salmon down โ if skin-on, skin side up first to get meaty side golden, or skin-side down if you want crispy skin. I do meaty side down first for 4-5 minutes until golden brown, then flip and cook 3-4 minutes more. You want it mostly cooked but not fully โ it finishes in the sauce.
Remove salmon to plate, set aside.
Step 2: Make the sweet sauce right in the same pan
Donโt wipe the pan โ those brown bits are flavor.
Drop heat to medium-low, add butter. Once melted, add garlic and ginger. Sautรฉ 45 seconds to 1 minute โ until you can smell it, not until it browns and gets bitter. If your smoke alarm is sensitive like mine, youโre on the right track.
Pour in maple syrup and soy sauce. If using sweet chili sauce or Dijon, add now.
Let it bubble gently for 2-3 minutes. It will look thin at first, then start to thicken slightly and coat the back of a spoon. It thickens more as it cools, so donโt over-reduce to syrup-hard.
Step 3: Bring them back together
Turn off heat. Return salmon to skillet. Spoon that sticky sauce over each fillet โ be generous, really coat it. Let it sit in the pan 1-2 minutes, spooning sauce over a couple more times. The salmon soaks it up.
This spooning part is critical โ baste it like you love it.
Sprinkle sesame seeds and green onions. Serve right from the pan if youโre feeling rustic, or plate it up.
How I Serve It So It Feels Like Takeout (But Healthier)
This sweet sauce is begging for rice. Trust me:

My Tips So Your Glaze Actually Sticks (And Doesnโt Burn)
- Real maple syrup only. Mrs. Butterworthโs is corn syrup and will burn and taste weird. Pure maple, the expensive one, is worth it here.
- Low-sodium soy. Regular soy plus maple reducing makes it salt-bomb. Low-sodium gives you sweet-salty balance.
- Donโt walk away during the 2-3 minute bubble. Maple goes from bubbly sauce to bitter burnt sugar fast. Stir and watch. When it coats spoon, stop.
- Pat dry. I said it before, Iโll say it again because I learned from soggy salmon. Dry fish equals golden crust.
- Donโt overcook. Salmon is done when it flakes easily with fork but still slightly darker and translucent in very center. If white gunk is oozing out everywhere, you went too far. Pull it earlier next time.
Variations for When Youโre Feeling Fancy
Dijon Maple Mustard: Whisk 2 tbsp Dijon into maple-soy sauce. Tangy, slightly spicy, clings beautifully to top of fish.
Spicy Maple: Add 1/4 to 1/2 tsp cayenne or a squirt of sriracha to sauce. Sweet-heat.

Storage & Leftovers That Donโt Suck
- Fridge: Cool, airtight container, 3 days. Sauce keeps salmon moist, so it reheats better than plain baked.
- Reheat: Oven 275ยฐF covered with foil 8-10 minutes, or in same skillet with splash water, spoon sauce. Microwave works but do 50% power in 30-sec bursts so you donโt nuke it.
- Next-day lunch idea: Flake cold maple salmon over my Mediterranean Quinoa Bowl or over leftover rice with extra sliced green onions and sesame. Cold maple salmon is legit good.

Can I use frozen salmon?
Yes, but thaw overnight in fridge first and pat super dry. Frozen holds water and sauce wonโt stick as well if wet.
What if I donโt have fresh ginger?
Use 1/4 tsp ground ginger, but fresh is so much better โ that zing is worth grating a tiny bit. I freeze my ginger root and grate from frozen, it keeps forever.
Can I make this in the oven instead of skillet?
Totally. Sear 5 minutes in oven-safe skillet then transfer whole skillet to oven at 400ยฐF for 8-10 minutes, basting halfway. Or bake on foil-lined sheet pan at 400ยฐF for 15-20 minutes with sauce drizzled over, no sear โ less crispy but still yummy.
Is this too sweet for kids?
My kids love it because it IS sweet, but you control it. If youโre worried, cut maple to 1/3 cup and add 3 tbsp water so sauce is lighter. Itโs still sweet but more mellow.
Skin on or off?
I buy skin-on, sear meat side first, then when you return to sauce the skin gets sticky and delicious. If you hate skin, cook skin-off, just reduce sear time by 1 minute.

Pat the salmon fillets very dry with paper towels. Season both sides evenly with the salt and black pepper.
Heat the sesame oil in a large skillet over medium heat until shimmering. Place the salmon in the skillet. (For skinless fillets, cook the meaty side first. For skin-on, you can start meaty-side down for a golden crust, or start skin-side down if you prioritize crispy skin).
Sear for approximately 4โ5 minutes on the first side, then carefully flip and cook for another 3โ4 minutes. It should be mostly cooked but not completely finished, as it will continue cooking in the glaze.
Reduce the heat to medium-low. Do not wipe out the skilletโthe browned bits add extra flavor! Add the butter and allow it to melt. Add the minced garlic and grated ginger and cook for 45โ60 seconds, stirring frequently until fragrant (do not let it burn).
Pour the pure maple syrup and low-sodium soy sauce into the skillet. If using sweet chili sauce or Dijon mustard, add it now.
Turn off the heat and carefully return the salmon fillets to the skillet. Spoon the warm maple glaze generously over each fillet. Allow the salmon to sit in the skillet for 1โ2 minutes while repeatedly spooning the sauce over the top.
