How to Make Easy Oven-Baked Salmon (Without Drying It Out)

Step 1: Crimp your foil like youโre making a little salmon boat
Preheat oven to 425ยฐF. Line baking sheet with foil. Place salmon skin-side down in center.
Now crimp all four sides of the foil up to create a border, like a shallow wall around the salmon. This catches the buttery juices so they donโt spread across the pan and burn and set off your smoke alarm. Which I have done. More than once.
Step 2: Mix two tiny bowls
Bowl 1 โ the rub: Brown sugar, paprika, garlic powder, cayenne, 1 tsp kosher salt, big grind of black pepper. Mix.
Bowl 2 โ the crunch: Panko, chopped parsley, melted butter, 1/4 tsp salt, few grinds pepper. Mix until panko is buttery.
Step 3: Dijon, then rub, then crunch
Pat salmon dry with paper towel โ super important, wet salmon steams instead of roasts.
Spread Dijon thinly over top and sides of salmon. Like youโre buttering toast, thin layer.
Press brown sugar mixture all over the salmon on top of Dijon. Really press it โ it should stick.
Then sprinkle panko-parsley mixture on top. Gently press so it stays. It will feel like a lot, thatโs good.
Step 4: Bake and donโt stare at it
Bake 15-18 minutes. What youโre looking for: breadcrumbs golden brown, salmon firm but still gives a little when you press the thickest part, and it flakes easily with a fork. If you have instant thermometer, 125-130ยฐF in thickest part for medium, 135ยฐF for well-done. I pull at 130ยฐF because it keeps cooking a minute.
If your panko isnโt golden yet but salmon is done, broil 1-2 minutes watching like a hawk so it doesnโt burn.
Let it rest 3 minutes. That bubbling buttery juice settles back in.
Dinner on one pan โ I throw asparagus around it for the last 8 minutes. Zero extra dishes.
The 3 Mistakes That Ruin Baked Salmon (Iโve Made All Of Them)
1. Overbaking. The number one salmon killer. If you bake until itโs pale and totally opaque and the white albumin is oozing out everywhere, you went too far. Salmon keeps cooking after you pull it. Take it out when center is still slightly translucent and darker โ it will carry over.

- Reheat: Please donโt microwave it into oblivion. Warm gently in 275ยฐF oven 8-10 minutes covered with foil, or flake cold over salad. Do I have to use skin-on?
