5 Chia Seed Pudding with Greek Yogurt Recipe

If someone told me a year ago that I’d have 5 little jars of chia pudding with Greek yogurt lined up in my fridge like I’m some organized meal prep person on TikTok, I would have laughed and then gone back to eating cereal straight from the box.

Because the first time I made chia pudding, it was a disaster. I dumped chia seeds into almond milk, didn’t whisk, went to check Instagram, came back to what can only be described as frog eggs floating in sad water. My husband poked it with a spoon and said “is this supposed to be… like that?”

No, babe, it was not.

Then I learned the Greek yogurt trick and everything changed. Yogurt makes it creamy, thick like real pudding instead of weird frog-egg soup, adds protein so I’m not hungry 20 minutes later, and kills that slight bitter thing chia can have.

Now I make these 5 flavors every Sunday — takes 10 minutes — and I actually eat breakfast all week. And yes — ALL 5 have Greek yogurt plus chia seeds. That’s the whole point. No plain chia plus water sad bowls here.

The Base That Never Fails (All 5 Start Here)

For ONE jar, my never-fail ratio with Greek yogurt:

  • 1/4 cup plain Greek yogurt — or vanilla if you want sweeter, Greek is key for protein and creaminess
  • 3/4 cup milk — oat milk creamiest, almond lighter, regular dairy fine
  • 2 tbsp chia seeds — black or white same thing
  • 1 tsp honey or maple syrup plus 1/2 tsp vanilla plus pinch salt

How: Whisk yogurt, milk, honey, vanilla, salt in jar until smooth. Add chia seeds, whisk. Wait 5 minutes — important — whisk AGAIN so seeds don’t clump into one big chia brick at bottom. Cover, fridge at least 1 hour, best overnight. Thickens from milk-like to pudding-thick.

If too runny after hour, you added too much milk. Add 1 tbsp more chia. If too thick, splash more milk. Easy fix.

Recipe 1: Vanilla Berry Greek Yogurt Chia Pudding — The Cheesecake One

Tastes like you swirled cheesecake into berries.

For 1 jar — Greek Yogurt Chia Pudding, Vanilla Berry:

  • 1/4 cup plain Greek yogurt
  • 3/4 cup oat milk
  • 2 tbsp chia seeds
  • 1 tsp honey plus 1 tsp vanilla extract plus 1/2 tsp cinnamon
  • Toppings: handful mixed berries — frozen wild blueberries best plus strawberries plus granola

Whisk Greek yogurt, oat milk, honey, vanilla, cinnamon until smooth, then whisk in chia seeds. Wait 5 min, whisk again. Fridge overnight. In morning top with berries and granola and drizzle peanut butter.

Why it works: Vanilla plus cinnamon makes Greek yogurt taste like cheesecake filling, berries sweet-tart. My kids call it berry ice cream breakfast. About 14g protein even before powder.

Recipe 2: Chocolate Peanut Butter Greek Yogurt Chia Pudding — The One That Should Be Illegal

Straight dessert. Chocolate pudding vibes but 30g protein.

For 1 jar — Greek Yogurt Chia Pudding, Chocolate PB:

  • 1/4 cup plain Greek yogurt
  • 3/4 cup almond milk
  • 2 tbsp chia seeds
  • 1 tbsp cocoa powder plus pinch salt plus 1 tsp honey — or 1 scoop chocolate protein powder instead of cocoa for 25g+ protein
  • 1 tbsp creamy peanut butter

Whisk Greek yogurt, almond milk, cocoa or protein powder, honey, peanut butter until smooth, no cocoa lumps, then add chia seeds. Whisk, wait 5, whisk again. Fridge.

Top morning: chocolate chips, banana slices, fresh berries. Chocolate plus banana combo is my favorite — tastes like you’re getting away with something.

Recipe 3: Banana Peanut Butter Greek Yogurt Chia Pudding — The Elvis Goes To Gym

My husband’s favorite. Banana plus peanut butter plus Greek yogurt.

For 1 jar — Greek Yogurt Chia Pudding, Banana PB:

  • 1/4 cup plain Greek yogurt
  • 3/4 cup oat milk
  • 2 tbsp chia seeds
  • 1/2 ripe banana, mashed really well — spotty ripe best
  • 1 tbsp peanut butter or almond butter
  • 1 tsp honey only if banana not super ripe plus pinch cinnamon

Mash banana into Greek yogurt and milk first until no big lumps, then add chia seeds. Banana sweetens naturally. Fridge overnight.

Top: banana slices and granola. Tastes like banana cream pie in a jar.

Recipe 4: Mango Coconut Greek Yogurt Chia Pudding — The Vacation Jar

Sunshine in January, still Greek yogurt plus chia inside.

For 1 jar — Greek Yogurt Chia Pudding, Mango Coconut:

  • 1/4 cup plain Greek yogurt
  • 1/2 cup oat milk plus 2 tbsp coconut milk
  • 2 tbsp chia seeds
  • 1/2 cup frozen mango chunks — blended first
  • 1 tbsp coconut flakes
  • Squeeze lime juice

Blend mango chunks with Greek yogurt and oat milk plus coconut milk until silky orange, pour into jar, whisk in chia seeds plus coconut flakes plus lime. Fridge.

Top: granola and extra mango and coconut. Bright, tropical, not heavy. Great for hot days.

Recipe 5: Berry Blended High-Protein Greek Yogurt Chia Pudding — The One That Actually Fills You Up

This one is blended silky — no bumpy seeds — and still Greek yogurt plus chia, but you soak chia first for better digestion plus protein punch.

For 1 jar — Greek Yogurt Chia Pudding, Berry Blended:

  • 1/2 cup plain Greek yogurt — yes, Greek yogurt still here
  • 1/4 cup oat milk or almond milk
  • 3 tbsp chia seeds plus 6 tbsp water — soak chia in water 10 minutes first, stir often so all seeds gel evenly into thick gel
  • 1 1/2 cups frozen mixed berries
  • 1 tbsp honey or 1 Medjool date soaked in hot water 10 minutes then pitted for natural sweetness
  • Pumpkin seeds for topping for extra protein

Soak chia in water 10 minutes to form gel. Blend frozen berries, Greek yogurt, oat milk, honey or date with immersion blender until smooth. Then stir chia gel into blended Greek yogurt berry base fully until incorporated. Fridge.

Thick, creamy, silky, actually filling — 14g protein and 10g fiber per serving even without protein powder, plus probiotics from yogurt.

My family loves this after Sunday dinner — even my 7 and 11 year olds wolfed it down. Great pre or post workout.

My Tips So You Don’t Make Frog Egg Soup

  • 3 tbsp chia per 1 cup liquid is golden ratio. Plus 1/4 cup Greek yogurt makes it extra thick. The yogurt counts as part of liquid plus creaminess. If you did 2 tbsp per cup and it’s runny like soup, add more chia.
  • Whisk twice. Once when you mix, wait 5 minutes, whisk again breaking up clumps. Otherwise chia sinks and forms one giant blob at bottom and watery milk on top — chia brick, not pudding.
  • Let it sit at least 1 hour, best overnight. 20 minutes okay in pinch, but overnight creamiest. I make them Sunday night.
  • Hate texture? Blend it. Grind chia seeds dry in blender before mixing, or blend finished pudding after it sets — smooth like regular pudding with Greek yogurt, no seeds to chew. Game changer if texture weirds you out.
  • Use plain Greek yogurt for control. Flavored yogurt already has sugar. Plain plus honey or banana lets you control sweetness and keeps protein high. My favorite is full-fat plain for creaminess or 2% for lighter.

  • Keeps 5 days covered in fridge. Chia plus yogurt holds up great, doesn’t get watery like plain chia plus milk.
  • Add toppings morning of so granola stays crunchy: berries, nut butter, granola, chocolate chips, pumpkin seeds.
  • If too thick after day 2, stir splash milk to loosen. If too thin, stir 1 tsp more chia and wait 20 min.
