Fold whites gently into batter in 2 parts โ first part stir a little to lighten batter, second part fold gently with spatula scraping bottom and folding over top, turning bowl. Donโt stir hard or you deflate all that air you just whipped. Fold until just no white streaks, stop.
Step 4: Rest 5 minutes
Let batter rest 5 minutes. It thickens slightly as almond flour hydrates. Meanwhile heat griddle or large nonstick skillet over medium-low heat, grease lightly with butter or oil.
Step 5: Cook low and slow, flip gently
Pour 1/4 cup batter per pancake onto hot griddle. Cook 3-4 minutes until bubbles form on top and edges look set and bottom is golden brown. These take longer than regular pancakes because almond flour is moist โ be patient, donโt flip early or they fall apart.
Flip gently with thin spatula, cook other side 2-3 minutes until golden.
Repeat, greasing griddle lightly each batch. Keep warm in oven 200ยฐF on baking sheet if making big batch.
Medium-low heat, 1/4 cup scoops, wait for bubbles โ almond flour needs a little more patience than regular flour.

My Tips So Yours Are Fluffy Not Flat or Gritty
- Blanched finely ground almond flour, not almond meal. Meal is coarser, darker, makes gritty dense pancakes. Bag should say blanched, super-fine.
- Whip whites to soft peaks, not stiff. Stiff peaks make batter dry and hard to fold and pancakes can be dry. Soft peaks โ cloud that holds but tip droops โ perfect lift plus moisture.
- Fold gently, donโt stir. Stirring deflates air and you lose fluff. Fold by scraping bottom and folding over top, turning bowl, until just no white streaks.
- Rest batter. 5 minutes minimum, 10 minutes even better. Almond flour absorbs liquid as it rests, batter thickens and holds shape instead of spreading into thin sad crepe.
- Medium-low heat. High heat burns outside before inside cooks. Almond flour has more fat, burns faster. Medium-low equals golden brown not dark brown.
- Small pancakes flip better. Big almond flour pancakes are fragile. 1/4 cup mounds about 3-4 inch diameter flip easiest. Save giant diner-size for regular flour.
Variations Because I Get Bored
Blueberry: Drop fresh blueberries onto batter after pouring onto griddle โ donโt mix into batter or it turns purple and watery. Fresh blueberries burst and get jammy.
