Okay, can we talk about how salmon can beโฆ a little boring? Like, I love salmon, but sometimes itโs just there on the plate being all healthy and responsible and Iโm like โokay, great, you have omega-3s, but whereโs the fun?โ
Enter Bang Bang Salmon Bites. This is the salmon that decided to get a personality.
We take salmon, cut it into little bite-sized cubes, season it with garlic powder, onion powder, paprika, little cayenne if youโre feeling spicy, then roast it super hot so it gets golden and crispy on the outside, tender and flaky inside. Then we drown it โ in a good way โ in Bang Bang sauce. Creamy mayo plus Thai sweet chili sauce plus sriracha plus honey plus a little soy plus garlic. Sweet, spicy, creamy, tangy all at once. The sauce that made Bonefish Grill famous and now lives rent-free in my fridge.
It takes 20 minutes flat. 8 minute prep, 12 minute roast, while it roasts you whisk sauce together in one bowl. Dinner that tastes like takeout, looks fancy, and my kids call them โspicy salmon nuggetsโ and actually ask for seconds. Thatโs how I know itโs a winner.

Why These Bang Bang Salmon Bites Are So Addictive
1. Bite-size equals more crispy edges. Big fillet has two sides. Little cubes have four, five crispy sides. More caramelized, more flavor, more sauce clings. Plus they cook faster โ 10 minutes in hot oven, then broil 2 minutes for golden.
2. Mayo trick. You toss salmon bites in just 2 tbsp mayo plus seasonings before roasting. Sounds weird, but mayo helps spices stick and makes salmon super moist and golden without drying out. Itโs my favorite roasting hack.
3. That Bang Bang sauce. Mayo plus sweet chili sauce plus sriracha plus soy plus honey plus garlic โ sweet, spicy, creamy, tangy. You can drizzle lightly or toss to coat fully like glazed nuggets. I do half drizzle, half toss so you get both crispy and saucy bites.
4. Three ways to cook, same result. Oven best for batches, air fryer best for extra crispy, pan-sear fastest for extra crust. I give you all three because Iโve done all three depending on how lazy I am.
What You Need
Serves 4-6 | 2 lbs salmon makes lots
For the Salmon Bites:
- 2 lbs salmon fillet, skin removed, cut into 1 to 1.5 inch chunks โ center-cut works best, but any works. Pat salmon DRY or it wonโt get crispy
- 2 tbsp mayo โ just regular mayo, the secret to moist golden bites
- 1 tsp onion powder plus 1 tsp garlic powder plus 1 tsp chili powder or smoked paprika
- 2 tsp garlic paste or 2 cloves garlic grated/minced
- Garlic salt and black pepper to taste
- Pinch cayenne optional for extra heat
- Olive oil spray or drizzle if air frying
For the Bang Bang Sauce (mix and taste โ make it yours):
- 3/4 cup mayo
- 1/2 cup Thai sweet chili sauce โ the one with little chili specks, not sriracha, sweet chili is sweet plus tangy
- 1 tbsp sriracha โ more if you like fire
- 1 tbsp soy sauce โ low sodium, just for salty depth
- 1 tsp honey โ balances heat
- 1 clove garlic grated or minced
- Optional: squeeze lime juice for tang
For Garnish:
- Green onions sliced, sesame seeds, parsley or cilantro chopped, lemon wedges

How to Make Bang Bang Salmon Bites
Total time: 20 minutes | Prep 8, Cook 12
Step 1: Prep the salmon
Preheat oven to 450ยฐF. Line baking sheet with parchment or foil.
Pat salmon dry โ really dry. If using frozen, thaw completely first. Remove skin: slide sharp knife between skin and flesh, hold skin taut with one hand, guide knife along skin. It lifts easily. Trim any leftover skin bits.
Cut into 1 to 1.5 inch chunks โ bite-size, not tiny, they shrink a little. Place in large bowl.
Step 2: Season with mayo trick
In small bowl, mix 2 tbsp mayo, onion powder, garlic powder, chili powder or paprika, garlic paste, garlic salt and pepper.
Add mayo mixture on top of salmon bites, toss gently to coat every piece. This mayo coating keeps them moist and helps get golden.
Spread salmon on baking sheet in single layer, 1-2 inches apart. Donโt overcrowd or they steam not roast. Space equals crispy.
Step 3: Roast hot and fast
Roast 10 minutes in preheated 450ยฐF oven. Then broil 2-3 minutes until nice and golden brown on top. Watch closely when broiling โ broiler goes from golden to burnt in 30 seconds. Iโve learned that while staring at my phone. Donโt be me.
Air fryer option: Preheat 375ยฐF, spray basket lightly, arrange in single layer, cook 8-10 minutes flipping halfway until golden and cooked to liking.
Pan-sear option: Heat nonstick skillet over medium-high with oil, sear in single layer 2-3 minutes per side until browned.
Hot oven 450ยฐF, 10 min roast plus 2 min broil โ golden, crispy edges, tender inside.
Step 4: Whisk the Bang Bang sauce while salmon roasts
In small bowl, whisk together mayo, sweet chili sauce, sriracha, soy sauce, honey, grated garlic. Taste โ want more heat? More sriracha. Sweeter? More honey. More tang? Squeeze lime. Make it yours.
Sweet, spicy, creamy, tangy โ whisk, taste, adjust. I always add extra sriracha.
Step 5: Drizzle or toss โ your call
Once salmon is golden and flaky, you have two options:
- Drizzle method: Leave bites on platter, drizzle sauce over โ you keep some crispy edges.
- Toss method: Add bites to bowl, pour sauce over, gently toss to coat fully โ saucier, glazed nugget style.
I do half and half because I want both textures on plate.
Sprinkle green onions, sesame seeds, parsley.
Serve immediately while hot and crispy.

My Tips So Yours Are Crispy Not Soggy
- Pat salmon super dry. Wet salmon steams, not roasts. Paper towels, press.
- Donโt overcrowd sheet pan. Space 1-2 inches apart. If crowded, moisture trapped, they steam and stay pale. Use two pans if needed.
- Mayo coating is key, but thin. 2 tbsp for 2 lbs is enough โ you want light coating, not mayo bath. Too much mayo makes them soggy.
- Hot oven. 450ยฐF is hot but thatโs how you get golden in 10 minutes without drying out inside. Lower temp equals longer bake equals dry salmon.
- Watch broiler. Broil 2-3 minutes max for golden top. Walk away and youโll have charcoal. Stay there.
- Make sauce to taste. Start with recipe, then adjust. I like extra sriracha and honey. Some like extra sweet chili. Taste as you whisk.
Variations
Extra crispy breaded: Dip seasoned salmon cubes in flour, then beaten egg, then panko, then air fry or pan-fry in oil until golden โ extra crunchy, like popcorn salmon.
Spicier: Add 1/4 tsp cayenne to seasoning plus extra sriracha plus pinch chili flakes in sauce.
Milder for kids: Skip cayenne and sriracha, use just sweet chili sauce plus mayo plus honey โ sweet creamy sauce, zero heat, kids love.
Gluten-free: Use gluten-free soy sauce plus ensure sweet chili sauce GF, coating is naturally GF if you skip flour and use cornstarch dusting.
Bowl meal: Serve over rice plus pickled cucumbers, avocado, edamame, green onions, sesame, extra sauce on side.
Storage & Leftovers
- Fridge: Cool completely, airtight container 2-3 days. Sauce separate if possible or it softens crust.
- Reheat: Best way is air fryer 375ยฐF 3-4 minutes or oven 400ยฐF 5-6 minutes to re-crisp. Microwave works 45 sec but softens crust โ still tasty, just less crispy.
- Make-ahead sauce: Sauce keeps 5 days in fridge in jar. Make double, use on shrimp, chicken, fries, everything.
- Raw salmon bites: Can cut and season up to 4 hours ahead, keep covered fridge, then roast fresh when ready. Great for party prep.

In a small bowl, combine the mayonnaise, onion powder, garlic powder, chili powder or paprika, garlic paste, garlic salt, black pepper, and optional cayenne. Add this mixture to the salmon and gently toss until all pieces are lightly and evenly coated.
Arrange the salmon bites on the prepared baking sheet in a single layer, leaving space between each piece. Roast for 10 minutes.
While the salmon cooks, whisk together the mayonnaise, Thai sweet chili sauce, sriracha, soy sauce, honey, and garlic. Add a squeeze of lime juice if desired. Taste and adjust with extra sriracha for heat or honey for sweetness.
